Not Your Ordinary Burrito Recipes

Most people are familiar with typical Mexican burritos. They usually contain some type of meat, beans, rice, and cheese among other popular toppings. But, have you ever wondered what else you can put into a burrito? The answer to that question is pretty much anything. The following are definitely not your ordinary burrito recipes, but they are just as (or maybe even more!) delicious.

Breakfast Burritos

Okay, so these are not so unordinary today as they used to be; many fast food restaurants even feature breakfast burritos on their breakfast menus. But this recipe from allrecipes.com will definitely be a family favorite. And another good thing about it is that it is easy to make! Although this is not as outside of the box as some of the following recipes, it is worth making at home.

1 lb. bacon

10 eggs

1 (16 oz.) can refried beans

8 oz. shredded Cheddar Cheese

10 (10 inch) tortillas

Directions:

1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside. Wrap the tortillas in foil and warm in the oven.

2. Fry the eggs in a greased skillet until firm. In a small saucepan heat the refried beans.

3. Top each tortilla with refried beans, 2 strips of bacon, 1 egg and a little cheese. Roll tortillas into burritos and serve.

Chili Potato Burritos

These burritos are quite unique. In fact, they don’t even have any meat in them, instead they are filled with potatoes and vegan chili. Think of it like this, they are like potato skins but inside of a burrito. Can it get any better then that? They answer is yes, because this recipe from Recipe4Living is also easy to make. Enjoy!

Ingredients:

4 potatoes

1 cup shredded Colby-Monterey Jack cheese

2 teaspoons chili powder

1-teaspoon cumin

1 clove garlic, minced

salt and pepper to taste

8 (6 inch) flour tortillas

½ cup red enchilada sauce

Directions:

Bring a large pot of salted boiling water to a boil. Cook potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and mash. Preheat oven to 350 degrees. In a medium-mixing bowl, combine mashed potatoes, ¾ cup cheese, chili powder, cumin, garlic, and salt and pepper. Spoon evenly into tortillas, and roll up. Place rolled tortillas side by side in an 8×8” baking pan. Spread enchilada sauce evenly over the top, and sprinkle with remaining cheese. Bake in preheated oven 15 minutes, or until cheese is bubbly.

Philly Cheesesteak Burritos

These might be the most delicious burritos you’ll ever eat. If you love cheesesteak as much as you love burritos, then these are definitely for you. This recipe from Recipe.com includes all your favorites like juicy steak, cheese, mushrooms, onions, and peppers. It takes about 40 minutes to prepare and put together which is plenty of time to get ready to eat one of the most delicious burritos that you’ll ever have.

Ingredients:

1 lb. beef top round steak, trimmed of fat

2 teaspoons all-purpose flour

¼ teaspoon dry mustard

½ cup fat-free milk

1 oz. reduced-fat Provolone cheese, torn into pieces (1 to 2 slices)

2 tablespoons grated Parmesan cheese

1 teaspoon olive oil

1 (8 oz.) package sliced fresh mushrooms, such as shiitake, button, or cremini

1 large onion, thinly sliced

1 medium red sweet pepper, seeded and cut into thin strips

1 medium yellow sweet pepper, seeded and cut into thin strips

½-1 teaspoon bottled hot pepper sauce

1 (8-9 inches) whole wheat, low carb flour tortillas

Directions:

1. Partially freeze meat. Thinly slice across the grain into bite-size strips.

2. meanwhile prepare cheese sauce. In a small saucepan combine flour, and dry mustard. Gradually add milk, stirring with a whisk until blended. Cook and stir until mixture comes to boiling; reduce heat. Gradually add cheeses, stirring until smooth. Remove from heat; cover and keep warm. The mixture will thicken as it cools.

3. In an extra-large skillet heat oil over medium-high heat. Add half of the meat; cook and stir about 3 minutes or until slightly pink in center. Remove with a slotted spoon. Repeat with remaining meat; remove. Add mushrooms, onion, half of the red pepper strips, and half of the yellow pepper strips to skillet; cook and stir about 4 minutes or just until tender. Return all of the meat to skillet. Season mixture with hot pepper sauce.

4. To assemble, spoon about 1 1/4 cups of the meat mixture onto each tortilla. Top with about 2 tablespoons of the cheese sauce. Fold bottom edge of tortilla up and over filling. Fold one opposite side in; roll up from the bottom. If necessary, secure with toothpicks. Serve with remaining sweet pepper strips on the side.

Cinnamon Apple Burrito

Of course a dessert burrito had to be included. Dessert burritos are actually becoming more popular as people have been experimenting putting dessert toppings and fruit inside a burrito. These cinnamon apple burritos from Spoonful, are absolutely delectable. It is like taking apple pie filling and putting it into a burrito. If you are looking for a unique dessert, here it is.

Ingredients:

2 large Granny Smith apples

½ cup orange juice

1 tablespoon lemon juice

1/3 cup packed light brown sugar

¼ teaspoon cinnamon

a pinch of ground cloves

1 tablespoon cornstarch

2 tablespoons cold water

½ cup chopped walnuts or pecans

4 (7 to 8 inch) flour tortillas

For the glaze: 1 tablespoon melted better, sugar

Directions:

1. Peel, core and quarter the apples. Then cut the quarters crosswise into thin slices and combine them with the orange and lemon juices in a medium-size saucepan. With the pan partially covered, bring the mixture to a boil. Then reduce the heat slightly and cook the fruit at a gentle boil or 5 minutes.

2. Stir in the brown sugar, cinnamon, and cloves and continue cooking the filling uncovered, stirring occasionally, for 2 to 3 minutes.

3. Blend the cornstarch and water in a small bowl and pour it into the apple mixture. Bring the mixture back to a boil, stirring continuously. Let the filling cook for 1 minute and then remove it from the heat and stir in the nuts. Transfer the mixture to a bowl to cool.

4. Heat the oven to 375 degrees. Line a medium-size baking sheet with parchment paper or lightly greased aluminum foil.

5. Working with 1 tortilla at a time, spoon a quarter of the apple filling down the center, leaving a generous 1-inch border at each end. Fold the ends over the filling, then fold over one of the sides to enclose the filling. Moisten the other edge of the tortilla with a pastry brush dipped in water, then continue to fold the tortilla so it rests on the moistened section. Place it on the baking sheet, seam down. Repeat for the other tortillas.

6. Brush each tortilla generously with melted butter, then sprinkle on sugar. Bake for 20 to 25 minutes, until the tortillas turn a rich golden brown. Transfer the baking sheet to a wire rack and let the burritos cool for at least 20 minutes before serving. Cut each one diagonally into halves to serve.
